Chocolate Mocha Cream Fancies

Sebelum ni pernah tayang chocolate coffee cream fancies cookies. Kali ni tukar pula coffee kepada mocha.


Chocolate Mocha Cream Fancies

Cookies
  • 60g ................................. Unsalted butter
  • 1tsp ................................. Mocha paste
  • 1tsp ................................. Milk
  • 2 1/2 tbsp ....................... Caster sugar
  • .......................................... A pinch of salt
  • 100g ................................ Plain flour
  • Coffee cream
  • 200g ................................ Icing sugar, sifted
  • 2tsp .................................. Vegetable oil
  • 1/4tsp .............................. mocha paste
  • 1-3tbsp ............................ Milk


60g ................................... Dark chocolate, melted



Make the cookies
  1. Beat butter, coffee extract, milk, salt and caster sugar until light and fluffy. 
  2. Stir in flour, the dough will be firm.
  3. Cover and refrigerate for 30 minutes.
  4. Preheat the oven to 180°C.
  5. Line the baking sheet with non-stick baking paper, or silpat.
  6. Roll the dough until 3mm thick.
  7. Cut the dough into 3.5cm rounds, and place in the prepared baking sheet.
  8. Bake for 8-10 minutes or until colored, stand the cookies on the baking sheet 5 minutes before transferring to wire racks.
Make the coffee cream

  1. Mix all the ingredients together add enough milk until the cream is spreadable.
  2. Spread the coffee cream over the cookies, stand on wire racks until set.
  3. Pipe melted chocolate over the cookies.
