Chocolate Mocha Cream Fancies
Cookies
- 60g ................................. Unsalted butter
- 1tsp ................................. Mocha paste
- 1tsp ................................. Milk
- 2 1/2 tbsp ....................... Caster sugar
- .......................................... A pinch of salt
- 100g ................................ Plain flour
- Coffee cream
- 200g ................................ Icing sugar, sifted
- 2tsp .................................. Vegetable oil
- 1/4tsp .............................. mocha paste
- 1-3tbsp ............................ Milk
60g ................................... Dark chocolate, melted
- Beat butter, coffee extract, milk, salt and caster sugar until light and fluffy.
- Stir in flour, the dough will be firm.
- Cover and refrigerate for 30 minutes.
- Preheat the oven to 180°C.
- Line the baking sheet with non-stick baking paper, or silpat.
- Roll the dough until 3mm thick.
- Cut the dough into 3.5cm rounds, and place in the prepared baking sheet.
- Bake for 8-10 minutes or until colored, stand the cookies on the baking sheet 5 minutes before transferring to wire racks.
- Mix all the ingredients together add enough milk until the cream is spreadable.
- Spread the coffee cream over the cookies, stand on wire racks until set.
- Pipe melted chocolate over the cookies.
